Here is how to prepare the turmeric couscous with roasted vegetables:
Ingredients
- Courgette – 1 small
- Cauliflower – 3-4 florets
- Shallot -1
- Bell pepper – 2 (red and yellow)
- Aubergine – ½
- Chilli flakes – ¼ tsp
- Salt – ¼ tsp.
- Couscous – 1 cup
- Turmeric powder – ¼ tsp.
- Salt – ½ tsp.
- Pomegranate seeds – 2 tbsp. to sprinkle on top
For the dressing:
- Flat parsley – 50g
- Lemon juice from 1 lemon
- Olive oil – 4 tbsp.
- Salt and pepper to taste
Directions
Hydrate the couscous:
The first step involves cooking the couscous. In a non-stick pan over medium heat add 1 cup of water a pinch of salt and ¼ teaspoon of turmeric powder. Bring to a simmer. Once simmering remove from the heat and pour 1 cup of couscous and cover with a lid. Let the couscous sit for about 4-5 minutes until it absorbs all the colorful turmeric water. Then fluff with a fork to break any lumps. Set aside and continue with the rest of the recipe.
Prepare the vegetables
The second step is bringing all the vegetables together along with some spices and roasting them. We have used cauliflower, aubergine, bell peppers and courgette which are few of our favorite picks for roasting.
Preheat the grill for 10 minutes.
Cut all the vegetables lengthwise and place in a bowl. Add salt, chili flakes, 2 tbsp. of olive oil. Mix well and place in the preheated oven for about 10 minutes, tossing in between.
Prepare the dressing
The third step is making the dressing. For this, we use a bunch of flat parsley leaves along with some olive oil, salt, lemon juice, and garlic to make a coarse paste. This dressing is an absolute must-have for this dish.
Bring all the dressing ingredients together and blend coarsely in a blender. Keep aside. Here you might want to add your favorite spices as well. At the same time you can also add nuts they will blend perfectly with the rest of the ingredients and go pretty well with the turmeric.
Serve:
Once everything is ready to assemble in a flat plate place a layer of cooked couscous and top it with the grilled vegetables and the dressing. Sprinkle some pomegranate seeds on top and enjoy.
Notes
This recipe can be served warm as an appetizer of cold as a salad if tastes amazing even if left in the fridge for one day.
