Couscous, what a brilliant idea! Versatile, delicious and super quick to cook, it allows us to prepare a thousand dishes, from the simplest to the most delicious!

Today our Fernanda Nicotra, food blogger at Giallo Zafferano has prepared it in a totally original way, making a couscous roll with courgettes stuffed with ham, cheese and salad.

A perfect dish to prepare in the morning and find ready on the table after a nice day at the beach!

Are you ready? Let’s run to the kitchen then, you’ll see how good it is!

Ingredients:

  • 1 large courgette; 
  • salt;
  • oil; 
  • 50g parmesan cheese;
  • 150g wholemeal cous cous Martino;
  • 150g boiling water;
  • 3 large eggs;
  • 120g cooked ham;
  • 120g thinly sliced provola cheese;
  • 80g mayonnaise
  • mixed salad to taste.

Procedure:

Grate the courgette with a wide-hole grater, add the salt, oil, grated Parmesan cheese and cous cous. Stir, add the boiling water, stir again, cover and leave to rehydrate for 10 minutes. After this time, drain everything.

Add the eggs, cover a 30×40 baking tin with baking paper, spread the mixture and bake at 180°C for 8-10 minutes, or until the centre of the mixture is dry when pierced with a toothpick.

Remove from the oven, unmould and immediately cover with greaseproof paper and roll up tightly, then wrap the roll in a tea towel and leave to cool in the fridge.

Unroll gently, fill with mayonnaise, salad, ham, cheese and roll up again. Place in the fridge for at least 30 minutes, then slice and serve.

This dish can be kept in the fridge for up to 24 hours, tightly closed in an airtight container or wrapped in baking paper.
