Berries have been shown to be some of the healthiest foods on the planet. Extremely high in antioxidants, berries are among our favorite superfoods. On the other hand, we have Greek yogurt a great alternative to most heavy creams out there! 

So how about a quick recipe with delicious creamy Greek yogurt, fresh berries and of course our delicious and healthy couscous? Definitely ideal for the spring days and summer evenings. We are certain that you will enjoy preparing and eating this dessert.

  • 150 ml of Strawberry juice
  • 1 tablespoon of granulated sugar
  • 100 grams of Martino’s couscous 
  • 100 grams of Greek yogurt
  • Fresh Berries as needed 


In a medium, heavy-bottomed saucepan over medium heat, pour 150 ml of Strawberry juice and add one tablespoon of granulated sugar. Bring the strawberry juice to a simmer so it becomes warm and the sugar is completely melted. 

Turn off the heat and pour evenly 100 grams of Martino Couscous. Cover with a lid and let the couscous absorb all the juice slowly for about 4-5 minutes. After the necessary time, fluff the couscous with the help of a fork to avoid creating any lumps and obtain a good texture. 

Prepare the cake mixture.
Pour the rehydrated couscous in a medium-sized mixing bowl and add 100 grams of Greek Yogurt. Mix well with the help of a spoon, until you have obtained a creamy and amalgamated mixture. If you would like to add your personal touch to the recipe by adding something crunchy to the cake here is the time to bring in those nuts you were thinking of. 

Shape the couscous cake
You will need an 8 cm in diameter metallic pastry cutter. With a spoon pour a little of the rehydrated couscous inside and with the help of a teaspoon compact it and make the surface smooth. At this point, remove the pastry cutter by pressing it slightly on the sides.

Notes and Variations:
You can prepare this recipe as individual desserts or as a big family cake. In the second case just make sure to use a large pastry cutter or a cake mold (one that has a diameter of around 20-25 cm).

Instead of Strawberry juice, you can use any other fruit juice that you love. If you plan to top the dessert with citrus fruits then you can use orange juice instead. If you are topping the dessert with apples you can use apple juice and so on! 

Finally, if you could replace Greek yogurt for ricotta cheese, cream cheese or even heavy cream, however, we find that yogurt is the lightest alternative of all. 

Gently wash the berries and let them air dry. You can of course use here any berries that you might have in handy at home: strawberries, blueberries, and blackberries are ideal and easy to find in almost every store all year round. Place them on the of the cake to garnish it as you like. You can use whipped cream or fresh mint leaves to decorate and add extra flavor!
