Savoury muffins are fluffy and tasty single-serving cupcakes, perfect for taking on a picnic, or putting in your kids’ backpacks for lunch!

Ours are Couscous corn muffins with peas and ham, nd the recipe is by Francesca Lucisano, food blogger at Giallo Zafferano!

Ingredients 

  • 200 g of corn couscous;
  • 200 g of 00 flour;
  • 300 ml lukewarm water;
  • 50 ml extra-virgin olive oil;
  • 1 sachet of instant yeast for savoury food;
  • 150 g peas;
  • 150 g cooked ham;
  • Salt and pepper to taste.

Preparation

Cook the peas in a small pan with a little extra virgin olive oil for about 10 minutes, then turn off the heat and set aside. Pour the corn couscous into a bowl and moisten it with warm water.

Leave it to stand for 10 minutes. After this time, fluff it up with a fork and season with salt and pepper. Add the extra virgin olive oil, yeast and sifted flour and mix well.

If necessary, add a little water to mix everything better. Finally, add the cooked peas and cooked ham. Mix everything together well and divide the mixture between the paper cups in a muffin tin.

Bake the muffins in a static oven preheated to 180°C for 20 minutes. After this time, take them out of the oven and leave them to cool down. Serve them at the table.
