Sometimes the hardest part of preparing a family meal is deciding what to cook. Everyone who is responsible for doing the cooking knows this. What to cook today? It doesn’t have to be that hard. Today we present a dish that will have the whole family lick their fingers – perfect for a Sunday lunch.

This creamy and cheesy couscous flan is the least to say: show stopping. The flavor of the couscous mixed with the cream cheese and gorgonzola are the ideal combination of comfort food while the grilled artichokes add a gourmet touch. Here is how to prepare this cheesy couscous flan for a delicious family lunch


  • 100 ml of water
  • 100 grams of Integral Martino Couscous
  • 50 grams of salt
  • Extra Virgin Olive Oil as needed
  • 100 grams of whole milk
  • 100 grams of Gorgonzola blue cheese
  • 100 grams of cream cheese
  • Black pepper
  • Butter for the pan
  • 2 artichokes
  • Grated Grana Padano cheese as needed
  • Preparation time: 50 minutes
  • Positions: 4 people


Grill the artichokes:
Using a pair of kitchen scissors, cut off the tip of each leaf to remove the pointy thorns. Slip your thumb under each leaf and snap it off. Try to do this as close to the root as possible to save as much of the “meat” on the leaf as possible.  

Now that you have a pile of ready-to-cook artichoke leaves, it’s time to make a foil packet to cook them in. Lay one 12-inch by 16-inch sheets of foil flat on a counter or table. Place the leaves in the center of each piece of foil. Drizzle with olive oil and season with salt and pepper. Bring the long ends of the foil together and fold down, as if wrapping a gift.

Place the packets directly onto the center of grill, or the side where the burner is turned off. Cover the grill and let cook 20 minutes, until the leaves are tender. Open the packets, and pour the leaves with their juices into a deep bowl and set aside.

Hydrate the couscous:
As always use a medium, heavy-bottomed saucepan over medium heat, pour 100 ml of water and 50 grams of salt and bring to a simmer. Once simmering pour 100 grams of whole integral Martino couscous making sure you are spreading it evenly. Cover with a lid and set aside for about 4-5 minutes.

Once the couscous is fully hydrated and has absorbed all the water drizzle Extra Virgin olive oil on top and fluff it with the help of a fork. This will remove any lumps and separate the delicate grains without crushing them to give the couscous a light, fluffy texture.

Prepare the cheese mix:
Place a pan over low to medium heat. Pour inside 100 ml of whole milk, 100 grams of Gorgonzola blue cheese cut in cubes and 100 grams of cream cheese. While the milk is getting warmer the cream cheese and the Gorgonzola will start to melt. Make sure you mix well to avoid having any lumps. Add black pepper and remove from the heat once you have an amalgamated mixture.

Prepare for baking:
Bring a porcelain baking tray and make sure you butter the bottom and sides of the dish to avoid the mixture from sticking. Next, with the help of a spoon pour half of the hydrated couscous and create an even layer in your baking tray. On top pour half of the cheese mixture and spread it evenly to cover all the couscous. Place the grilled artichoke leaves on top. Continue with one more layer of couscous and one more layer of the cheese mix. Finally sprinkle with grated Grana Padano cheese.  

Place your baking tray in a preheated oven and bake the couscous flan at 200 degrees Celsius for approximately 15 minutes. When ready the Grana Padano cheese on top will have melted completely and will have a golden color. Remove from the oven and let it cool down for a couple of minutes before serving.
