When we are in a rush to cook we always make discounts when it comes to desserts and sweet treats. Most of us probably turn to readymade sweets which are usually full of preservatives and very high in sugars. We are in need then, for simple easy-to-make recipes that any home cook can prepare with simple ingredients and in no time.

Ingredients:

  • 100 grams of Couscous Martino
  • 130 ml of whole milk
  • a spoonful of granulated sugar
  • 1 egg
  • 1/4 of an apple
  • 20 grams of flour
  • orange zest
  • 2 grams of baking powder
  • peanut oil
  • powdered sugar

Directions:

Hydrate the couscous:
As always use a medium, heavy-bottomed saucepan over medium heat, pour 130 ml of whole milk and a tablespoon of granulated sugar and bring to a simmer. Once simmering pour 100 grams of Martino couscous making sure you are spreading it evenly. Cover with a lid and set aside for about 4-5 minutes.

Once the couscous is fully hydrated, fluff it with the help of a fork. This will remove any lumps and separate the delicate grains without crushing them to give the couscous a light, fluffy texture.

Prepare the fritters mixture:
Bring a large mixing bowl and pour inside the hydrated couscous. Add 20 grams of flour and 2 grams of baking powder. Mix with the help of a spoon. Continue by adding one egg (white and yolk) and the zest of an orange. Dice ¼ of an apple and toss the cubes inside the mixture. Mix everything well.

Ready to fry:
Take a small portion of the sweet couscous mixture in your hands and form small balls with your palms. Pour cooking oil to the depth of about 4cm into a pan and heat over a medium flame to 170 degrees Celsius. Fry the croquettes several at a time in the oil, turning them over as needed so they brown evenly. Adjust the flame as needed so the oil doesn’t get too hot (which would brown the croquettes before the interior is hot). Cook them in batches; do not crowd the pan. When the croquettes are browned and hot, drain them on paper towels. Serve immediately.

Ready to serve:
Sprinkle the fritters while still warm with powdered sugar and add a pinch of cinnamon. Or if you are filling whimsical, feel free to play with all kinds of sweet syrups or even honey! Finally, if you are into a hot – cold flavor, serve the couscous fritters with vanilla ice cream or even cold yogurt. What a delish!

Variation:
You can practically use any fruit you want in this recipe. Replace the apple with pears, bananas, peaches or use dried fruits or even nuts if you like. For Halloween season use pumpkin! It is up to you.

Another variation you can make is replacing the cinnamon with nutmeg, anise, cardamom, or any spice that you fancy.

For vegans replace whole milk with rice milk, or even coconut milk!
