When it comes to fritters, there’s no doubt about it – these delights will win everyone over!
Today get ready to fry, because couscous fritters with courgettes, served hot freshly made, are a delight for all the senses!

Ingredients
- 300g of courgettes;
- 100g of couscous;
- 2 eggs;
- Salt to taste
- Olive oil to taste;
- 60g parmesan or grana cheese;
- 2 eggs;
- Sunflower oil
Procedure
Grate the courgettes with a wide-hole grater and collect everything in a bowl.
Add a little salt and squeeze with your hands to remove some of the vegetable water.
Add the couscous, a little oil and mix.
Cover the bowl and cook in the microwave for 5 minutes.
Wait a few minutes and then drain the cous cous (if necessary, add a little more boiling water), add the grated cheese, two eggs and mix.
Let it rest for two minutes and start frying the fritters, turning them only when a crunchy crust has formed.
They are ready, all that remains is to enjoy them!
