The recipe is by Francesca Lucisano, foodblogger at Giallo Zafferano.
- 100 g organic couscous;
- 300 ml water;
- 2 egg;
- 50 g Parmesan cheese;
- Salt to taste
- Pepper to taste
- Sunflower oil
Pour the organic cous cous into a bowl and rehydrate it with warm water. Let it stand for 10 minutes, then fluff up the couscous with a fork. Add the salt, pepper, grated Parmesan cheese and eggs. Mix everything together until the mixture is smooth.
Pour the oil into a frying pan with a diameter of 24 centimeters and heat it well. As soon as the oil is hot, pour the mixture into the pan and flatten it well with the back of a spoon. Let the omelet cook for about 7 minutes.
After this time, turn the omelet with a lid and continue cooking for another 7 minutes. The couscous omelet is ready to be served.
