Savoury pea couscous biscuits with basil are perfect for these occasions: tasty and crunchy, they will win everyone over!

Ingredients
- 50 ml water
- 50 g of Martino pea couscous
- 60 g of 00 flour
- 1 yolk
- 40 g Parmesan cheese
- 1 teaspoon of instant yeast
- A pinch of salt
- Basil
Procedure
Pour the water into a saucepan, add salt and bring to a boil. Add the Martino pea couscous and leave it to rehydrate for five minutes, covered with a tea towel. In the meantime, chop up the basil and place it in a bowl.
Grain the couscous, pour it into a bowl and add in this order: the egg yolk, the Parmesan cheese, the flour, the yeast and the basil. Add salt to taste and mix until the mixture is smooth.
Form the biscuits into walnut-sized balls and flatten them. Place them on a baking tray lined with baking paper and bake at 180° for 20 minutes.
Remove from the oven and serve with cream cheese
