Here is how to prepare the Martino Couscous Pie with purple cabbage

Servings: 6 people
Preparation: 15 minutes
Baking: 20 minutes

Ingredients:

  • 250 ml of water
  • 250 grams of Martino Couscous
  • Extra virgin olive oil
  • 200 grams of purple cabbage
  • 1 mozzarella ball
  • 1 teaspoon of vinegar

Directions:

Hydrate the Couscous:
In a medium, heavy-bottomed saucepan over medium heat, add 250 ml of water and one teaspoon of salt and bring everything to a simmer.

Remove the saucepan from the heat when already simmering, and add 250 grams of Martino’s Couscous. Let the couscous sit with a lid on top for 4-5 minutes until the water is completely absorbed and the couscous is hydrated.

When ready, drizzle extra virgin olive oil and fluff with the help of a fork.

Prepare the cabbage:
Of all the accompaniments to grace our dinner tables, the deep purple hue of red cabbage is perhaps the most striking.

Before cooking, remove any tired or discolored leaves, cut the cabbage into quarters, remove the stalks and shred or chop the leaves.

Always cook red cabbage with a little vinegar as this preserves the beautiful purple color – without it, the cabbage will turn blue!

To preserve the crunch, cook in salted boiling water with a teaspoon of vinegar for 5 minutes unless a softer consistency is desired, in which case cook for a little longer.

When ready drain the cabbage well and season with extra virgin olive oil, salt and pepper.

Assemble the couscous pie:
For this you will need a baking ring. Place the ring on top of a baking tray with parchment paper to avoid sticking while baking.

Then, with the help a spoon add the couscous approximately up to the middle of the baking tray. Press well with the spoon to even out the surface.

In the middle of your couscous layer dig a round well and place the boiled purple cabbage inside. Add diced mozzarella cheese on top of the cabbage.

Finally, in order to add some more color to your pie, you can drizzle some of the cabbage water on top of the couscous. The couscous will absorb the striking purple color and your pie will look so inviting!

Bake the pie:
Place the baking tray with your baking ring filled with this amazing pie in a preheated oven at 180ºC for approximately 20 minutes. When ready, place the baking ring in your serving dish and remove it carefully to preserve the shape of the pie.

Serve warm, to make sure that the mozzarella cheese is still melted!
