We bring you a sweet couscous and pineapple recipe that is mouthwatering and so easy to make. Juicy, sweet and sour this delicious snack will bring the colors and taste of summer in your kitchen. The pineapple caramelized with honey and cinnamon on top of the delicate couscous grains will delight you and will make you feel as if you are standing right under the shadow of a palm tree.

Here is how to prepare this amazing Couscous snack with apple juice and caramelized pineapple

Ingredients:

  • 60 ml Concentrated Pineapple Juice
  • 90 ml Concentrated Apple Juice
  • 150 grams of Martino Couscous
  • 3 slices Fresh Pineapple
  • 3 tablespoons Multiflower Honey
  • 2 teaspoons ground cinnamon
  • Sliced Almonds as needed
  • Preparation:25 minutes
  • Portions:4 bowls

Directions:

Hydrate the couscous:
In a medium, heavy-bottomed saucepan over medium heat, pour 90 ml of concentrated apple juice and 60 ml of concentrated pineapple juice. Bring the juices to a simmer and turn the heat off. Pour 150 grams of Martino couscous in the pan making sure you are spreading it evenly. Cover with a lid and set aside for about 4-5 minutes.

Once the couscous is fully hydrated and has absorbed all the juices fluff it with the help of a fork. This will remove any lumps and separate the delicate grains without crushing them to give the couscous a light, fluffy texture.

Cut the Pineapple:
Use a sharp knife or a serrated knife to trim off the top of the pineapple, being cautious with the stiff leaves. Then cut off the base of the pineapple so that it will stand up straight. Next cut vertically to remove the skin in strips. Using the tip of a small knife, carefully remove the ‘eyes’ from the flesh.

Once peeled cut 3 horizontal slices approximately half inch wide and then cut them into chunks. Make sure to remove the central stem of the pineapple.

Caramelize the pineapple:
In a non stick frying pan over medium heat pour 3 tablespoons of Multiflower honey and add to teaspoons of ground cinnamon. When the honey has melted toss the pineapple pieces inside and let them cook slowly with the honey. During the cooking the pineapple will release its own juices and creating a mouthwatering combination with the honey. Make sure to stir gently with a wooden spoon from time to time and let it caramelize until all the juices are absorbed. Once ready set the caramelized pineapple aside and prepare for serving.

Prepare for serving:
Add 4 tablespoons of apple juice in your couscous and and mix well. Bring 4 serving bowls and with the help of a spoon add the couscous in each bowl. In each bowl lay on top of the couscous the caramelized pieces of pineapple which should have a beautiful golden color. Before serving sprinkle on top sliced almonds to your preference.

Notes and variations:

  • For this recipe you can also used canned pineapple. The caramelization process is the same but the final results might be slightly sweeter.
  • Good additions to the recipe are also coconut flakes they combine well with the aroma and taste of the pineapple.
  • Finally for the apple juice it is best if you use the juice of green apples, the slightly sour taste will be delicious when combined with the sweetness of the pineapple.
  • In the hot summer days you can freshen up the recipe by adding an ice cream ball on top of the caramelized pineapple.
