This simple recipe for couscous with broccoli pesto will be a perfect snack to serve during parties, as it is easy to eat even standing, delicious and healthy as well. Plus, it is 100% vegetarian.

Like all oilseeds, pine nuts are also very energetic and caloric, therefore perfect for those who practice sports or to deal with periods of stress and fatigue. Broccolis contain powerful antioxidants and promote healthy digestion. Moreover, thanks to the presence of dietary fibers, they also help to maintain the sense of satiety.

Couscous with broccoli pesto

Ingredients (for two people)

  • 2 Broccoli
  • 200 g of chickpeas couscous
  • Garlic
  • Parmesan
  • Pine nuts
  • Salt
  • Oil


Bring the water to a boil in a steel saucepan and remember to add salt.
Cut the broccoli into small pieces removing the bases. Wash them in a salad bowl with water, then boil them for 10 minutes.

Meanwhile, bring to a boil some water in a pan, then pour the couscous into it. Let it rest for five minutes, or until the water gets completely absorbed. Pour 4 tablespoons of extra virgin olive oil and salt, and mix very well until the couscous is fully seasoned: in this way it will crumble perfectly.

Remove the broccoli with a slotted spoon and place them directly in the mixer. Set aside some broccoli tops for the final garnish. Add parmesan, pine nuts, garlic and extra virgin oil in the mixer and blend at maximum speed, obtaining a cream. Season with salt and cooking water if you find it too thick.

In a little glass cup, arrange a layer of couscous and one of pesto, one of couscous and one of pesto until the glass is full. Then add some cheese, broccoli and pine nuts to decorate.
