But if you are tired of this traditional go-to recipe, we bring you today a delicious dish with couscous and porcini mushrooms. A traditional recipe with a twist, to add flavor and lightness. The recipe is so easy to prepare and it will satisfy even the most demanding ones. Not to mention that it is a healthy and balanced meal. The earthy taste of the porcini mixed with the light creamy texture of the sour cream and the mild flavor of the couscous will surprise you. Here is how to prepare the Couscous with Porcini Mushrooms:

For the couscous:
- 200 ml of water
- 5 grams of salt
- 200 grams of Martino Couscous
- Olive oil as needed
For the mushroom sauce:
- One garlic clove
- 300 grams of porcini
- Chopped parsley
- 100 ml of sour cream
- Parmigiano Reggiano as needed
- Extra virgin olive oil
Hydrate the couscous
In a non-stick pan pour 200 ml of water, add 5 grams of salt and bring everything to a simmer. When simmering turn off the heat and pour 200 grams of Martino Couscous.
Make sure to cover with the pan with a lid and let it sit for 4-5 minutes until the couscous has absorbed all the water and has become fluffy.
When ready, season with extra virgin olive oil and fluff the couscous with the help of a fork. This will remove any lumps and separate the delicate grains without crushing them to give the couscous a light texture.
Prepare the Porcini sauce
In a non-stick pan pour extra virgin olive oil, add one garlic clove inside and let the oil heat and absorb the aroma of the fresh garlic. Remember, the longer you cook the garlic, the less it will taste and smell and the more creamy and subtle its flavor becomes. So make sure to cook it just enough.
Next, add 300 grams of porcini mushrooms a pinch of salt and chopped parsley. Saute the mushrooms until they soften (cook for about 4-5 minutes, until they get tender).
When ready pour 100 ml of sour cream and let it cook together with the mushrooms until it becomes creamy and the sauce is ready. Pour the sauce in a bowl and set aside.
Baking the couscous with porcini
Use a porcelain baking pan with a lid. With the help of a spoon add one layer of couscous in the baking pan followed by one layer of porcini and sour cream sauce. Repeat until the pan is filled. Sprinkle on top with as much Parmigiano Reggiano as you enjoy. When finished close the lid and place in the oven. Grill for 5 minutes at 200°C.
Your delicious couscous will mushroom is ready to be served. If you have individual baking pans you can serve it directly with the pan. This way all the juices of the mushrooms, the cream, and the melted cheese will stay in the portion. What a delish! You can serve this dish for lunch and for dinner – and it is a great substitute and a healthier choice to mac and cheese.
The couscous with porcini goes perfectly well with white wine.
