Today we propose a delicious sweet couscous recipe that is healthy, low in calories and organic. The Martino couscous combined with the dried fruits and the aroma of cinnamon in this easy to prepare recipe is so satisfying. Here is how to prepare this dessert with Porto, honey, and dried fruits
Ingredients:
- 200 ml of water
- 1 teaspoon of salt
- 1 teaspoon of grounded cinnamon
- 100 grams of Martino Couscous
- extra virgin olive oil as needed
- 60 grams of dried fruits
- 60 grams of raisins hydrated in Porto
- 30 grams of honey
Directions:
Rehydrate the raisins in Porto
Measure 60 grams of raisins and toss them inside a small bowl. Pour Porto and leave the dried fruit aside to absorb the aromatic wine and hydrate to the full. When they are fully hydrated you can remove the raisins from the Porto, but you can also use the juice left to add extra flavor to your dessert.
Hydrate the couscous:
In a medium, heavy-bottomed saucepan over medium heat, pour 200 ml of water, one teaspoon of salt and one teaspoon of grounded cinnamon and bring to a simmer. Once simmering, pour 100 grams of Martino Couscous making sure you are spreading it evenly. Cover with a lid and set aside for about 4-5 minutes.
Once the couscous is fully hydrated and has absorbed all the water, drizzle extra virgin olive oil on top and fluff it with the help of a fork. This will remove any lumps and separate the delicate grains without crushing them to give the couscous a light, fluffy texture.
Mix the ingredients:
In a mixing bowl add the hydrated couscous, 60 grams of dried fruits of your preference. A good choice for this recipe are walnuts but you can make your own experiments. Add the rehydrated raisins and 30 grams of honey. Mix everything well with the help of a spoon and your delicious sweet snack is ready to serve.
Serve:
Pour the sweet mixture into a small serving bowl and drizzle honey on top, sprinkle dried fruits and cinnamon according to your preference. The perfect sweet snack or a ready to go breakfast for you and your beloved ones!
Variations:
You can hydrate the couscous in rice milk or whole milk if you wish. Instead of raisins, you can add any dried fruits. You can experiment with apricots, dried pineapples, darts or anything you fancy. Finally, you can rehydrate the raisins in brandy or any other spirit that you find aromatic.
