Are you feeling that early spring feeling too? We immediately took the opportunity to offer you one of the first recipes with a spring-like flavour: couscous cakes with a heart of jam! The recipe is by our food blogger Antonella Falce!

INGREDIENTS:

  • 200 ml milk
  • 200 g of couscous Martino
  • 60g of sugar
  • Vanillin
  • Lemon peel
  • Blackberry jam
  • Oil at the taste.

PROCEDURE:

Pour the milk into the saucepan, add sugar and vanillin, and bring it to the boil. Stir, turn off the flame and add the couscous. Let it rehydrate for about 5 minutes covered with a cloth.

Let it cool down, pour it into a bowl and add an egg. Stir to obtain a homogeneous mixture.

Sprinkle the ramekins with oil and pour in part of the mixture.

Shape the pie shell with a spoon, pour a heart of your favourite jam in the centre and close with the remaining couscous. Bake the pies at 180° for 20 minutes. Remove from the oven and sprinkle with icing sugar before serving. Your couscous cakes are ready!
