Not to mention that is so easy to make. This Mediterranean-inspired lunch, will leave everyone satisfied and full without compromising on healthy nutrients.
Here is how to prepare this heart of couscous with stringy corn:
- 350ml water
- 1 ½ teaspoon of salt
- 1 ½ tablespoon of extra virgin olive oil
- 350 grams of Martino Corn Couscous
- 2 eggs
- 60 grams grated parmesan cheese
- 200 grams of tomato sauce with oregano
- 200 grams of Scamorza cheese
- Servings: 6 persons
- Preparation: 15 minutes
- Baking: 40 minutes
Hydrate the Couscous: In a medium, heavy-bottomed saucepan over medium heat, add water, salt and 1 ½ tablespoon of extra virgin olive oil and bring everything to a simmer.
When already simmering, remove the saucepan from the heat and add 350 grams of Martino’s Corn Couscous. Let the couscous sit for 4-5 minutes until the water is completely absorbed and the couscous is hydrated.
Fluff with the help of a fork. This will remove any lumps and separate the delicate grains without crushing them to give the couscous a light, fluffy texture.
Add the rest of the ingredients:
Whisk 2 eggs (yolks and whites) in a small bowl and add them to the couscous. For a smooth and homogeneous result make sure to pour the eggs in small increments stirring well each time.
Add 60 grams of grated Parmesan cheese and mix until everything is well combined.
Finally, add 200 grams of tomato sauce with oregano and stir your couscous gently to obtain an amalgamated mixture.
Prepare for baking:
In a heart shaped silicon form spread half of mixture in an even layer.
Cut 200 grams of Scamorza cheese into thin slices and layer them on top of the couscous. Make sure to cover the whole surface. When baked the cheese will melt and stretch making this heart of couscous amazingly tasty.
Next layer the second half of the couscous mixture on top of the Scamorza cheese.
Add a finishing touch by sprinkling as much Parmesan cheese as you wish on top of Marino’s corn couscous dish.
You are now ready to bake this melt-in-the-mouth heart of couscous! Place the heart shaped form in a preheated oven for 25-30 minutes at 180 degrees Celsius. When it is baked evenly and the couscous is firm set the oven to grill for approximately 5 minutes, until the top is golden brown.
Your heart of corn couscous is now ready to serve! Make sure you serve it warm, while the cheese inside is melted.
You can replace the Scamorza cheese in your heart of couscous with any cheese you prefer as long as it is not a watery one.
