It seems new research is constantly being published and berries are being recognized and analyzed for their health-giving properties. Extremely high in antioxidants, berries are among our favorite foods. That is why we bring this elegant couscous baskets with berries to delight you.
The little baskets filled with couscous and your favorite berries are a sweet treat that you will enjoy every time. They are easy to make and elegant to serve. If you are having guest over for coffee or tea this sweet little treats will surprise everyone. Not to mention that is a healthy replacement to processed ready bought sweets, which you want to avoid if you are a being careful about your nutrition.

Here is how to prepare them:
- 100 ml of whole milk
- 2 cinnamon sticks
- 1 tablespoon of cane sugar
- 100 grams of Martino Integral Couscous
- 3 thin slices of white bread
- 1-2 teaspoons of melted butter
- 300 grams of berries
- 1 mint leaf
- 30 grams of cane sugar
Hydrate the couscous
In a medium, heavy-bottomed saucepan over medium heat, add 100 ml of whole milk, one tablespoon of cane sugar and 2 cinnamon sticks and bring to a simmer.
When the milk is simmering, remove from the heat and sprinkle 100 grams of Martino Integral Couscous. Make sure to distribute the couscous evenly and leave it aside for 4-5 minutes until all the water is completely absorbed.
Now the couscous should be fully hydrated. Fluff it with a fork. This will remove any lumps and separate the delicate grains without crushing them to give the couscous a light, fluffy texture.
Prepare the bread baskets:
To begin with, use a sharp knife to remove the crust from the four sides of the bread slices. When all the three slices are ready, with the help of a wooden rolling pin press each bread slice on top of a flat surface.
You are now ready to create the baskets. In the microwave melt 1-2 tablespoons of butter. Spread the melted butter over each of the bread slices with the help of a kitchen brush. Bring a cupcake baking tray and place each of the buttered bread slices inside the cupcake tray to form 3 little and crunchy baskets. If you do not have a cupcake baking tray, you can use small porcelain baking dishes.
Place the bread in a preheated oven and let bake for approximately 10 minutes at 200 degrees Celsius. Make sure that the bread slices are golden before removing them from the oven. Let them cool down while you prepare the rest of the recipe.
Prepare the Berries
In a non-stick frying pan toss the berries of your choice and add 30 grams of cane sugar as well as one (or more) mint leaf. Mix with the help of a wooden spoon and toss the berries around in the pan until they release all the juices and become caramelized. When ready, set aside to cool down and get ready to assemble the couscous berries baskets.
Assemble the baskets:
In a serving tray of your choice place the three baked bread baskets. Add one teaspoon of the berries juice inside. Continue by adding the couscous and in the end a teaspoon of caramelized berries. Serve the dish with fresh berries, ice cream or frozen yogurt!
