Crispy on the outside, soft on the inside, perfect with a fresh yogurt sauce, for an aperitif on the terrace on a hot summer’s day!

These are the Red lentil couscous fritters, a quick, tasty and delicious idea to try our lentil couscous in another guise!

Ingredients for 4 people

  • 200 g of red lentil couscous;
  • 400 ml lukewarm water;
  • 100 g of 00 flour;
  • 50 g of grated Parmesan cheese;
  • Water to taste
  • Salt and pepper to taste
  • Sunflower oil for frying to taste

Preparation

Pour the red lentil couscous into a bowl and moisten with warm water. Let it stand for 10 minutes, then fluff it up with a fork. Add salt, pepper, flour and grated cheese.

Mix everything together with a spoon and, if necessary, add enough water to make the mixture thick and fluid enough. Pour the seed oil into a frying pan and bring to temperature.

As soon as the oil is hot, fry the fritters in spoonfuls until golden brown on both sides. Remove them from the oil with a slotted spoon and place them on a plate lined with paper towels to remove excess oil. Serve the red lentil couscous fritters at the table.
