Ingredients
- 150g of red lentil couscous
- 150g of lukewarm water
- Plain cucumbers
- white celery
- radishes
- 5 round tomatoes
- 1 lemon
- almonds
- parsley
- evo oil
- apple vinegar
- salt
- pepper
Procedure
Finely chop the vegetables: cucumbers and celery into cubes and radishes into thin slices. Put the vegetables in a bowl and season with lemon zest, olive oil and plenty of apple vinegar, salt and pepper. Mix well and set aside to marinate.
In the meantime, pour the red lentil couscous into a bowl and moisten it with the same amount of warm water. Let sit for 10 minutes, until the couscous has absorbed all the water. Add a little olive oil and crush the couscous with a fork.
Add the cous cous to the vegetables and mix. Separately, empty the round tomatoes and fill them with the vegetable couscous. Add a handful of chopped almonds and parsley and serve.
