Versatile and easy to cook, couscous allows you to indulge in the kitchen and create special dishes with very little effort, and if the classic one is good, the wholemeal one with its texture, perfume and intense taste is really exceptional!
In this recipe we tell you how to accompany it with salmon and avocado, in the preparation of a tasty, elegant and impressive appetizer!

Ingredients for 4 people
- 100 g wholemeal couscous;
- 100g boiling water;
- Olive oil to taste;
- Salt to taste;
- Lemon juice to taste;
- 350g ripe and palatable avocado;
- 300g smoked salmon;
Procedure
Pour the couscous into a bowl, add the boiling water, salt and oil and stir. Cover and leave to rest for at least ten minutes.
Chop the salmon with a knife, season with oil and lemon juice and leave to marinate for at least 10 minutes.
Chop the avocado and season with salt, oil and lemon juice, then shell the couscous, leave to cool and assemble the tartare using 6cm diameter ramekins.
Make a layer of couscous, one of avocado and one of salmon.
Place in the fridge for at least 30 minutes, turn out and garnish with mint or parsley leaves, lemon slices and a drizzle of oil.
