- 100 ml water
- 100 g of couscous Medio Martino
- one courgette
- one carrot
- one pepper
- 100 g 00 flour
- instant yeast
- two eggs
- salt to taste
- evo oil
- 100 ml milk
- 50 g parmesan cheese
Cut the vegetables into cubes and pan-fry them with a little oil and a pinch of salt until they are soft. Pour the water into the saucepan, add salt and bring to the boil. Turn off the flame, add the couscous and let it rehydrate. Grain the couscous and pour it into a bowl. Add the eggs, milk, flour, oil and cheese and mix. Add the vegetables, a handful of oregano and finally the instant yeast. Pour the mixture into muffin cups and bake for 30 minutes in a static oven at 180°.
