Summer is the best season to prepare fresh, quick dishes that are ideal for a day at the beach or a trip out of town.

Our food blogger Dalila Putignano, has come up with an excellent seafood couscous in a jar with special ingredients that enhance the taste.

Here is the recipe!

Ingredients:

  • 150g medium couscous
  • 1 courgette
  • 150g vegetable stock
  • 1 carrot
  • 150g mussels in oil
  • 100g yellow dates
  • 30g blackberries
  • A small glass of apple vinegar
  • Olive oil
  • Basil
  • Parsley
  • Sichuan pepper

Procedure:

In a bowl, pour the natural couscous and wet it with the same amount of vegetable broth. Let it stand for 10 minutes until the couscous has absorbed all the stock. Add a little oil and fluff up the couscous with a fork.

Separately, dice the carrot and courgette. Put the vegetables in a jar, add oil, apple vinegar, salt and Sichuan pepper. Shake well and leave to stand. 

In the meantime, cut up the yellow dates and set them aside.

Season the couscous with vegetables, cherry tomatoes, mussels in oil and blackberries. Use the oil from the vegetables and mussels to season and flavour the couscous.

Pour everything into a glass jar and take it to the beach with you.
