Egg white omelette with Couscous of peas Martino

Read and find out what ingredients are needed for the recipe:

  • 100 g of Martino pea couscous
  • 100 ml water
  • Onion cream
  • 4 egg whites
  • Salt
  • EVO oil

Procedure:

Bring to the boil pour 100 ml of water, 5 gr of salt and 100 gr of the Couscous Martino with peas; let it rest for a few minutes and shell it with a fork adding a drizzle of oil. In the same frying pan, add the onion cream and allow it to take on flavour over a high flame.

In a bowl, whip the egg whites with a whisk, add the Parmesan cheese and then the prepared couscous. Pour the mixture into silicone muffin cups and bake at 180 degrees for about twenty minutes. Take the mini omelettes out of the oven, it’s best to serve them straight away so they don’t risk slowly deflating.
