Getting children to eat fish is not always easy, so one solution could be to create original and creative dishes that contain it and are appetising to the eye and taste! Today we propose pea couscous balls with salmon and courgettes. The recipe is by our food blogger Antonella Falce.
Ingredients:
- 100 ml water
- 100 g of couscous Martino
- one courgette
- 100 g natural salmon fillets
- One egg
- a pinch of salt
- evo oil
- Greek yogurt
Procedure:
Bring the water to a boil, salt it and add the pea couscous. Allow the couscous to rehydrate and fluff it up with a fork.
In the meantime, roughly grate a courgette. Add the cous cous to the courgette and mix.
Add an egg. Add the salmon fillets. Cut into walnut-sized patties.
Oil a baking tray and place the patties on it. Bake in a static oven at 180° for about 30 minutes. Serve with a light Greek yogurt sauce with olive oil and a pinch of salt.
