Sweet pancakes are hard for anyone to resist! Crispy on the outside and soft and delicious on the inside, these Sweet couscous, apple and date fritters are quick to make and perfect for a trip out of town.

Ingredients

  • 100g of Martino wholemeal couscous
  • 150g of milk
  • a cinnamon stick
  • 60g of sugar
  • 2 eggs
  • 1 apple
  • a dozen dried dates
  • a teaspoon of baking powder
  • a tablespoon of wholemeal flour
  • seed oil for frying

Procedure

Peel an apple and cut it into one centimetre cubes. Add the dates cut into very small pieces and two tablespoons of sugar. Stir and leave to marinate while you work on the couscous.

In a saucepan, pour the milk, the remaining sugar and a cinnamon stick (or a teaspoon of cinnamon powder). Bring to the boil.

Pour the milk over the couscous and leave it to stand for 5 minutes. After this time, fluff up the couscous with a fork and add it to the marinated fruit. Add one egg at a time and a teaspoon of yeast, stirring with a spoon. The mixture should be soft, but depending on the size of the eggs, you may need a tablespoon of flour to thicken it.

Heat the seed oil and dip a spoonful of the mixture into it. Wait until the pancakes are golden brown on both sides and place them on a sheet of frying paper.

Dust your pancakes with icing sugar and serve with English sauce.
