Isn’t it always a fun challenge to come up with new ways to enjoy leftovers? These Sweet Couscous Croquettes are superb, easy to make and a perfect side to some ice cream or even a great breakfast! Sounds good?
The Sweet Couscous Croquettes are packed with the aroma of cinnamon and the sweetness of honey. You can always add some sliced almonds though. In fact, play with this recipe and add what you like. Just be sure to enjoy the croquettes warm with a glass of milk or a cup of coffee.

Here is how to prepare them:
- Preparation: 10 minutes + 2 hours of the dough to rest

Ingredients
- 180 ml of whole Milk
- 150 grams of Martino’s Couscous
- 1 tablespoon of Granulated Sugar
- 150 grams of Flour 00
- 1 orange peel
- 30 grams of Granulated Sugar
- 5 grams of Beer Yeast
- Water as needed
- 1/2 teaspoon Cinnamon Powder
- Peanut Oil as needed
- 100 grams of Honey
Preparation
Hydrate the Couscous:
In a medium, heavy-bottomed saucepan over medium heat, pour 180 ml of whole milk add one tablespoon of granulated sugar. Bring the milk to a simmer so that it is warm and the sugar melted.
Turn off the heat and pour evenly 150 grams Martino Organic Couscous. Cover with a lid and let the couscous absorb all the milk slowly for about 4-5 minutes. After the necessary time, fluff the couscous with the help of a fork. This will help avoid any lumps in the mixture of the croquettes.
Yeast
While you are waiting for the couscous to absorb all the milk, make sure to dissolve the 5 grams of beer yeast in a glass with 50 ml of water. Set it aside and use it in the next step.
Prepare the croquettes dough:
In a large mixing bowl add the rehydrated couscous; add 150 grams of flour, 30 grams of granulated sugar, zest from one orange and the dissolved yeast.
Begin to knead the mixture with your hands until all the ingredients come together into a soft dough.
Cover the mixing bowl with a plastic wrap then let the dough rise for about 2 hours until it becomes fluffy!
Cooking the couscous croquettes
After the 2 hours have elapsed and your dough has raised you are now ready to cook it and transform it into delicious crunchy croquettes.
First, with your hands take small portions of the dough and shape it into little cylinders of about 1 cm thick and about 4/5 cm long. Place them in a tray and get ready to cook.
In a large non-stick frying pan let the peanut oil heat for a couple of minutes. When ready place the couscous croquettes in the pan and let them fry until golden. Make sure to cook all sides of the croquettes equally.
Line a plate with absorbent kitchen paper and place the fried croquettes on top. The paper with absorb the extra oil and will leave the croquettes crunchy!
Melt the honey
This is especially useful if you are using raw honey which is usually not liquid enough to sprinkle on top of your croquettes.
Transfer all the honey you want to melt into a tall, room temperature glass jar with a lid. Loosely cover the jar. Using a lid will help prevent water from accidentally getting inside the jar and into the honey.
Fill a deep saucepan roughly halfway with water. Place this saucepan on the stove over high heat, keeping it there until it reaches a rolling boil. Place the jar of honey directly on the bottom of the pan so that it is now surrounded on all sides by hot water.
Another easier way to melt raw honey is to simply place it in the microwave for 1-2 minutes.
Serve
Bring your serving dish. Place the croquettes in the serving dish warm but not hot. Sprinkle with cinnamon on top and then with the melted honey! Your croquettes are ready!
