Peaches are probably one of the most delicious fruits available out there. There is nothing better than taking a juicy bite of a fresh peach in the hot summer months. However, what is great is that now we can enjoy them even in the winter months. Those canned peaches in syrup can be delicious to eat and a great addition to a dessert recipe.
Today we bring a dessert that combines the juice flavor of peaches, the mild flavor of couscous and the crunchiness amaretti cookies to create a decadent dessert that will amaze you. Not to mention that it’s so easy to prepare you can pull it off anytime during the week. Gather your ingredients and get ready.

Here is how to prepare this sweet couscous with peaches and chocolate drops
Ingredients:
- 110 ml of almond milk
- 1 tablespoon of granulated sugar
- 100 grams of Martino’s whole couscous
- 150 grams of peaches in syrup
- 70 grams of dark chocolate drops
- 8/10 amaretti cookies or macaroons
Directions:
Hydrate the couscous
In a medium, heavy-bottomed saucepan over medium heat, add 110 ml of almond milk, one tablespoon of granulated sugar and bring to a simmer.
When the milk is simmering, remove from the heat and sprinkle 100 grams of Martino Integral Couscous. Make sure to distribute the couscous evenly and leave it aside for 4-5 minutes until all the water is completely absorbed.
Now the couscous should be fully hydrated. Fluff it with a fork. This will remove any lumps and separate the delicate grains without crushing them to give the couscous a light, fluffy texture.
Prepare the rest of the ingredients
Remove the peaches from the syrup and dice them with the help of a sharp knife. Next, bring 8-10 amaretti cookies and crush them to make delicious cookie crumbles. You can either do this by hand or add the cookies in a plastic bag and crush them with a meat mallet. Just make sure not to crush them too small. You don’t want them to turn into powder but rather obtain crunchy chunks.
Mix the ingredients
In a large mixing bowl pour the hydrated couscous, add the diced peaches and then the dark chocolate drops. Finally, add the cookies crumbles and mix all the ingredients with a wooden spoon. If you find your mixture to be too dry you can add one tablespoon of the peaches syrup.
Serving
Add the mixture into small serving bowls and press lightly with a spoon to obtain an even surface. Sprinkle some chocolate drops and cookies crumbles on top and your dessert is ready to serve.

If you want to prepare your own amaretti cookies here is an easy recipe:
- Preheat oven to 300 degrees F (150 degrees C). Line baking sheets with parchment paper.
- In a food processor, grind the almonds into a fine meal. Add the sugar and continue to process for another 15 seconds. Finally, add egg whites and almond extract, continue to process until a smooth dough forms around the blade.
- Using a teaspoon, place well-rounded spoonfuls of dough onto prepared baking sheets. Cookies should be at least 1 1/2 inches apart. Bake in preheated oven for 20 to 30 minutes. Cookies should be golden. Allow cookies to cool completely on the paper before removing. Store in a dry place.
This recipe can be ideal for vegans. You can replace the amaretti cookies with your favorite vegan cookie of any caramelized nuts for an extra crunchy flavor.
