When it comes to Mexican food, a tortilla is an important ingredient. After all, it’s used in so many dishes, including tacos, enchiladas, burritos, taquitos, and more. Most people are only familiar with flour tortillas, however, today we are going to spice things up a little bit and bring you a delicious couscous tortilla recipe that you can serve with 4-5 different filling and have a fast recipe in your cookbook for those busy weekdays! 

The basis for cooking Couscous tortillas is quite simple! You can use simple ingredients that are found in every kitchen. Even better you can reuse leftovers from the previous days to fill in your tortillas! In no time you will have a delicious lunch that is healthy and low cost too. So grab your onions, potatoes, peppers and Martino’s peas couscous and get ready to cook! Make sure to save your creativity for the fillings!

Ingredients:

  • 1 Onion
  • 400 grams of Potatoes
  • 1/2 yellow pepper
  • 1/2 Red pepper
  • Extra virgin olive oil as needed
  • Salt as needed 
  • 5 Eggs
  • 90 ml of Water
  • 80 grams of Martino’s Peas Couscous
  • ½ teaspoon Salt
  • 1 tablespoon extra virgin olive oil
  • Fresh rosemary as needed 

Preparation

To begin with, cut the onion into thin slices and toss them in a pan with a drizzle of extra virgin olive oil.

Peel and cut the potatoes into small pieces, then add them to the chopped onion, add a pinch of salt, and then cook until they become soft and the onion golden. 

Next, peel and chop the peppers into small pieces then cook in another pan with a little oil and a pinch of salt. 

Rehydrate the Pea’s couscous

In a medium, heavy-bottomed saucepan over medium heat, pour 90 ml of water, add a pinch of salt and one tablespoon of Extra Virgin Olive Oil. Bring it to a simmer. 

Turn off the heat and pour evenly 80 grams Martino Pea’s couscous. Cover with a lid and let the couscous absorb all the water slowly for about 4-5 minutes. After the necessary time, fluff the couscous with the help of a fork to avoid any lumps from forming and to obtain the perfect texture.

Prepare the tortilla mix

In a mixing bowl add 5 eggs white and yolk and beat them well.

At this point, add the potatoes, peppers, eggs, a pinch of salt, one of pepper to the couscous and mix to mix all the ingredients well.

In a non-stick, pan drizzle extra virgin olive oil and pour the tortilla mixture into it, Cook it for about 5-6 minutes on each side, until it is well browned.

Serve: 

You can fill in and serve a couscous tortilla with all sorts of vegetables and proteins! Here are some ideas: 

Fill in with avocado, spring onions and chive 

Or if you prefer mushrooms fill the tortilla with Garlic sautéed mushroom, chili, and some fresh spinach 

Add hot smoked salmon, lemon crème and dill on top of your tortilla for a summery flavor

Or if you want some Asian taste add Asian spicy prawns for a completely different flavor
