Have you ever been to Greece or simply tried a Greek salad?

Its smell and taste, its vivid and bright colours are the essences of summer and in this recipe, inspired by this famous dish, but revisiting it in a multi-ethnic way, we will make a tasty whole couscous salad with feta and summer vegetables,  from a recipe by Fernanda Nicotra food blogger at Giallo Zafferano.

It’s a perfect idea for a hot summer day!

Ingredients for 6-7 people:

  • 200g whole wheat couscous;
  • 1 cucumber;
  • 1 red onion;
  • 350g cherry tomatoes;
  • 200g feta cheese;
  • 1/2 red pepper;
  • Black or white olives to taste if desired;
  • Oregano;
  • Salt;
  • Extravirgin olive oil.

Procedure

Pour the wholemeal couscous into a bowl, cover with boiling water, oil and salt and stir. 

Cover the bowl with a tea towel and leave to rehydrate. Prepare the vegetables, wash and slice the onion and cucumber.

Divide the cherry tomatoes in two, preferably sweet and firm, remove the seeds and filaments from the pepper and cut it into matchsticks.

At this point, take the couscous, shell it with the help of a fork, add the vegetables and season with salt, oil and oregano.
